Tasting Notes

On the palate, the wine is lively and precise, with flavours of lemon, green apple and ripe pear balanced by crisp acidity. A lightly saline finish adds length and freshness. Production
Produced in the Etna region of eastern Sicily, the wine reflects vineyards shaped by high-altitude conditions, cool mountain influences and dark volcanic soils. Etna’s significant day-to-night temperature variation helps preserve freshness while allowing the grapes to develop aromatic intensity. The fruit is harvested at optimum ripeness and vinified with a focus on purity, typically using gentle pressing and temperature-controlled fermentation to retain the wine’s lively citrus character and mineral definition.

Food & Serving
Serve well chilled at approximately 8–10°C. Its freshness and saline finish make it a natural partner for grilled fish, seafood pasta, oysters, fresh cheeses and lighter poultry dishes; it also works beautifully with Sicilian recipes featuring herbs, citrus and olive oil. Decanting is not normally necessary, although opening the bottle 10–15 minutes before serving can help its aromas unfold.
