The soils here are predominantly decomposed lava, ash, and basalt, providing excellent drainage and imparting the distinctive mineral character that defines Etna’s best whites. Carricante grapes are typically harvested by hand, parcel by parcel, to ensure only perfectly ripe, healthy fruit enters the cellar. In line with quality-focused Etna producers, the must is gently pressed and fermented at controlled temperatures in stainless steel to capture purity and freshness, with possible short lees contact to enhance texture and complexity without overshadowing the grape’s natural tension and clarity. The result is a precise, terroir-driven Etna Bianco that speaks clearly of its volcanic origin.
