The elderberries are processed within hours of harvesting to preserve their delicate aromatic profile. Capovilla distills without adding alcohol or sugar, carefully managing temperature and distillation timing between the boiling points of alcohol and water to capture the most nuanced flavors and aromas. The result is a highly precise fruit spirit that highlights the character of a single fruit at its freshest point.

Food & Serving
Best served slightly chilled in a small tulip glass to concentrate its aromatic profile. It pairs beautifully with dark chocolate, berry desserts, aged cheeses, or can be enjoyed as a contemplative after-dinner spirit. Decanting is not necessary.
