Tasting Notes
In the glass, Concilio 600Uno Trento Brut displays a bright, pale straw-yellow color with fine, persistent bubbles forming a delicate mousse. The nose is fresh and inviting, offering notes of green apple, pear, white flowers, and citrus zest, layered with subtle hints of brioche, toasted nuts, and mineral undertones from extended lees aging. On the palate, this Trento Brut is crisp and well-structured, with lively acidity that keeps the wine precise and refreshing. Flavors of crunchy apple, lemon curd, and stone fruit are complemented by a gentle creaminess and a clean, chalky finish. The magnum format helps the wine evolve slowly, enhancing complexity while preserving its youthful vibrancy, allowing a few years of further cellaring if desired while remaining immediately enjoyable now.

Production
The grapes for Concilio 600Uno Trento Brut come from hillside vineyards in Trentino Alto Adige, where cool alpine breezes, significant day–night temperature swings, and mineral-rich soils combine to produce Chardonnay with excellent aromatic lift and natural acidity. The fruit is harvested by hand at optimal ripeness to preserve delicacy and freshness. After careful pressing, the base wine is fermented at controlled temperatures in stainless steel to retain purity of fruit. The traditional method (Metodo Classico) is then employed, with secondary fermentation taking place in the bottle, followed by an extended period of aging on the lees to build texture, fine bubbles, and subtle yeasty complexity before disgorgement and final dosage.

Serve well-chilled at around 6–8°C (43–46°F) to highlight its freshness and finesse. Decanting is not necessary; simply open and pour, giving the wine a moment in the glass to fully express its aromas and fine perlage.
