Tasting Notes
In the glass, Canon 2019 shows a deep, radiant ruby colour with vibrant reflections that hint at both youth and intensity. The nose opens with pure aromas of ripe raspberries and red plums, followed by notes of raw cocoa, dark chocolate, pencil shavings and delicate rose petals, creating a complex and high-toned bouquet. On the palate, the wine is medium to full-bodied, silky and multi-layered, with a refined sense of weightlessness despite its depth. A dense core of ripe red and dark berry fruit is framed by beautifully polished tannins and lively, refreshing acidity. The texture is smooth and elegant, carrying flavours of juicy plum, red cherry, cocoa and subtle spice into a long, perfumed finish. Though already remarkably accessible in its youth, this vintage has the structure and balance to age gracefully for 15–25 years or more, gaining further complexity and tertiary nuances over time.

Production
Château Canon sits on the famed limestone plateau of Saint-Émilion, where thin clay soils over hard limestone give naturally low yields and exceptional freshness. The vineyard, predominantly planted to Merlot with a significant proportion of Cabernet Franc, is carefully managed with meticulous parcel selection and hand harvesting at optimal ripeness. In the cellar, individual plots are vinified separately to preserve the character of each terroir, typically in temperature-controlled vats, before blending. The wine is then matured in French oak barrels (a portion of which is new) to build texture and complexity, while allowing the purity of fruit and the signature limestone-driven minerality to remain at the forefront.

Canon 2019 pairs beautifully with refined dishes such as roast lamb with herbs, veal tenderloin, duck breast, beef fillet, and game birds, as well as mushroom-based dishes and aged hard cheeses. Its balance of richness and freshness makes it versatile at the table, enhancing both classic French cuisine and more modern, minimalist plates. Serve at 16–18°C (60–64°F) for optimal expression, and decant for 1–2 hours in its youth to allow the aromatic complexity and fine tannins to fully unfurl. As the wine ages, a shorter decanting time will be sufficient to wake it up without diminishing its delicate bouquet.
