Canon 1er Grand Cru Classé Saint-Emilion, 2015

Château Canon 2015 is a refined Saint-Émilion red from one of the appellation’s most distinguished estates, classified as Premier Grand Cru Classé. The vintage combines the estate’s hallmark limestone-driven elegance with the richness and polish of an outstanding Bordeaux growing season, making it appealing both now and for further cellaring.

Tasting Notes
Deep ruby to garnet in appearance, with a beautifully composed nose of black cherry, ripe plum and cassis layered with violet, cedar, graphite and subtle spice. The palate is concentrated yet poised, offering silky tannins, fresh acidity and a mineral, chalky character that gives the wine impressive definition. A harmonious finish brings together dark fruit, floral nuances and finely integrated oak. Canon 2015 is already approachable with decanting, but its structure and balance should allow it to develop gracefully for many years—potentially through the 2030s and beyond when well stored.

Production
The vineyards of Château Canon are situated on the limestone plateau of Saint-Émilion, where clay and limestone soils help provide both richness and freshness. Grapes are harvested by hand and carefully selected before fermentation, with the wine traditionally matured in French oak to build complexity while preserving the estate’s mineral precision. The exceptional 2015 growing season contributed to ripe fruit, polished tannins and excellent balance.

Food & Serving
Serve at approximately 16–18°C. Decant for 1–2 hours when enjoying the wine now, particularly from a young bottle, to open its aromas and soften the tannins. Its structure and depth make it a natural partner for roast lamb, beef tenderloin, venison, duck, côte de boeuf and mature hard cheeses.

Château Canon is one of the historic estates of Saint-Émilion, with roots reaching back to the 18th century. Named after privateer Jacques Kanon, who acquired the property in the 18th century, the château has long been associated with elegant, age-worthy wines shaped by the limestone plateau. Since 1996, the estate has been owned by Chanel, whose investment and detailed vineyard and cellar work have further strengthened Canon’s reputation among the leading producers of Saint-Émilion.
