Tasting Notes
This vintage typically shows a deep garnet core with bright ruby highlights at the rim. On the nose, expect layers of ripe dark cherry, plum, violet, cedar, graphite, and subtle spice, with a touch of earthiness and mineral lift that reflects its Right Bank character. The palate is elegant and polished, balancing ripe fruit with fine tannins, fresh acidity, and a graceful savory edge. While already expressive, it has the structure to continue developing beautifully over time, gaining more complexity with additional cellaring.

Produced in Saint-Émilion on Bordeaux’s Right Bank, Canon benefits from a terroir of limestone and clay that helps preserve freshness and gives the wine its signature mineral precision. The grapes are carefully harvested and vinified with a focus on detail and balance, typically with parcel selection to highlight the best fruit and preserve the estate’s finesse.

This wine pairs wonderfully with roast lamb, beef tenderloin, duck breast, mushroom dishes, and other rich, savory cuisine. Serve at around 16–18°C, and consider decanting for 1–2 hours if opening young to allow the aromatics and structure to fully unwind.
