Tasting Notes
In the glass, it typically shows a deep garnet core with evolving brick-red edges, reflecting its age. The nose is expressive and layered, with notes of ripe dark plum, black cherry, cedar, tobacco, graphite, and subtle earthy nuances, alongside hints of dried flowers and sweet spice. On the palate, it is medium- to full-bodied with polished tannins and fresh Bordeaux acidity, giving the wine balance and poise. The finish is long and savoury, with red and black fruit, mineral detail, and gentle tertiary complexity. It is drinking well now, though it can continue to evolve gracefully for several more years under the right cellaring conditions.

Production
Canon is based on prime limestone and clay soils in Saint-Émilion, a terroir that brings freshness, tension, and aromatic complexity to the wine. The 2008 vintage was made through careful vineyard selection and traditional Bordeaux winemaking, with fermentation and ageing in oak barrels helping to preserve structure while adding finesse and complexity.

A natural match for roast lamb, duck breast, beef fillet, game, or mushroom-based dishes, as well as aged hard cheeses. Serve at around 16–18°C and consider decanting for about 1 hour if drinking now, especially to help the wine open up and show its full aromatic range.
