Tasting Notes

On the palate, the wine is notably fresh and elegant, with a clean, mineral character and a well-balanced finish. Its freshness makes it especially enjoyable in its youth, when the floral and citrus notes are at their most vibrant. Serve within the next few years to preserve its lively, expressive style.

Production
The wine is produced in Salento, in southern Puglia, between the Ionian and Adriatic Seas—an area shaped by its warm Mediterranean climate and proximity to the coast. After destemming, the grapes undergo a short cold maceration before gentle pressing. Fermentation takes place in stainless-steel tanks over several days at 15°C, followed by approximately five months of maturation, preserving the wine’s freshness and mineral character.

A versatile partner for fish, seafood and light appetisers, this Fiano also works beautifully with fresh salads, delicate pasta dishes and mild cheeses. Serve well chilled at approximately 8–10°C. Decanting is not necessary; simply open shortly before serving or pour into a suitable white-wine glass to allow its floral and herbal aromas to emerge.
