Camilucci Franciacorta Ammonites Dosaggio Zero is a bone-dry, characterful sparkling wine from the hills of Lombardy, crafted in the traditional method and bottled without dosage. Blending Chardonnay, Pinot Nero, and Pinot Bianco, it showcases the purest expression of the terroir and the house style at Camilucci. Named “Ammonites” in homage to the marine fossils found in local soils, it ties the region’s ancient geological history directly to what’s in your glass.
Tasting Notes
In the glass, this Franciacorta shows a bright, pale straw-yellow color with fine, persistent bubbles and a delicate mousse. The nose is precise and vibrant, offering notes of green apple, lemon zest, white flowers, and pear, layered with hints of toasted almond, fresh bread crust, and a subtle chalky minerality.
On the palate, Ammonites Dosaggio Zero is taut and linear, with a crisp citrus backbone and flavors of Granny Smith apple, white peach, and grapefruit. The absence of dosage highlights its saline, mineral edge and gives it a wonderfully dry, clean finish, while the Pinot Nero adds structure and gentle red-fruit nuance. Production
The grapes for Camilucci Franciacorta Ammonites Dosaggio Zero are sourced from selected vineyards in the gently rolling hills of Lombardy, where a combination of limestone-rich, morainic soils and a mild climate influenced by nearby Lake Iseo gives the wines their finesse and mineral backbone. Yields are kept low, and the grapes—Chardonnay, Pinot Nero, and Pinot Bianco—are harvested by hand to ensure only the healthiest clusters reach the cellar. After gentle pressing, the base wines are vinified separately, typically in temperature-controlled stainless steel to preserve precision and aromatics, with a portion sometimes aged on fine lees for added texture. The traditional method (Metodo Classico) second fermentation takes place in bottle, followed by an extended period of lees aging to develop complexity and fine bubbles. At disgorgement, no dosage is added, producing a Dosaggio Zero style that reflects the terroir in its purest, most uncompromising form.

This ultra-dry Franciacorta is ideal with delicate yet flavorful dishes: think oysters, raw or lightly marinated seafood, sashimi, ceviche, and simple grilled fish with lemon and herbs. It also pairs beautifully with fresh goat cheese, burrata, vegetable tempura, or light antipasti such as carpaccio and crudo. Serve well-chilled at around 6–8°C to highlight its tension and minerality. A brief 10–15 minutes in the glass or a quick splash into a small decanter can help the aromas open up, but extended decanting is not necessary—its charm lies in its energy and precision.
