Caldaro Quintessenz Sauvignon 2023 is a refined Alto Adige white that captures the cool-climate precision and mountain character of Trentino Alto Adige. Made by Kaltern Caldaro, it stands out for its layered complexity, slow, artisanal production, and a style that balances ripe fruit with a distinctly mineral, saline finish.

Tasting Notes
In the glass, it shows an intense straw yellow color with bright green reflections, hinting at both freshness and concentration. The nose is complex and expressive, with notes of blackcurrant, Golden Delicious apple, and white peach, lifted by subtle spice and the quiet depth that comes from careful oak maturation. On the palate, it is spicy, smooth, and beautifully structured, with a strong sense of elegance and minerality. The finish is long and saline, giving the wine a vibrant, mouthwatering edge. While already highly expressive, it should also reward a few years of bottle age as its texture and aromatic complexity continue to unfold.

Production
This Sauvignon Blanc comes from Alto Adige DOC, where the terroir is shaped by alpine influences, warm sunny days, and cool nights that help preserve freshness and aromatic precision. The grapes are pressed extremely slowly as whole bunches, then the unfiltered must undergoes spontaneous fermentation in 500-liter oak barrels and large wooden casks. The wine is then matured in wood for 10 months on fine lees with regular bâtonnage, adding depth, texture, and complexity.

Food & Serving
This is a versatile food wine that pairs especially well with seafood, grilled white fish, shellfish, risotto, herb-roasted poultry, and refined vegetable dishes. It also works beautifully with goat cheese or dishes featuring asparagus and fresh herbs. Serve chilled, ideally around 10–12°C, and decanting is generally not necessary, though a brief aeration can help open up its more nuanced aromas.
