Tasting Notes
In the glass, this Riserva shows an opaque, shimmering dark ruby color with violet highlights that hint at concentration and youth. The nose opens with intense blackcurrant and ripe blackberry, layered with notes of cedarwood, graphite, tobacco leaf, and a subtle green pepper nuance typical of mountain-grown Cabernet. Hints of dark chocolate, roasted coffee bean and sweet spice (clove, vanilla) emerge as it breathes. On the palate, it is full-bodied yet finely poised, with juicy black fruit at the core—cassis, black cherry and plum—supported by firm, polished tannins and a refreshing Alpine acidity. Savory undertones of bay leaf, pencil shavings and licorice add complexity, while the oak is well-integrated, lending structure rather than dominating. The finish is long, dry and precise, with lingering dark berry, spice and a touch of mineral salinity. This 2021 vintage is already enjoyable with a good decant, but has the structure to age gracefully for 8–12 years, developing more tertiary notes of leather, tobacco and dried herbs over time.

Production
The Quintessenz Cabernet Sauvignon Riserva is sourced from select, low-yielding vineyards around Lake Caldaro in Trentino-Alto Adige, where warm days, cool nights and well-ventilated slopes allow Cabernet to ripen fully while preserving acidity. The vines grow on a mosaic of limestone, clay and porphyry-rich soils that contribute both power and a distinct mineral spine. Grapes are typically hand-harvested in small crates to ensure optimal ripeness and careful selection in the vineyard. After destemming, fermentation takes place in temperature-controlled tanks with regular pump-overs to extract color, aroma and fine tannins. The wine is then matured—largely in small oak barrels, a portion new—for an extended period as a Riserva, allowing the structure to soften, the flavors to knit together, and the varietal character to gain complexity before bottling and further bottle aging.

Food & Serving
This structured, elegant Cabernet Sauvignon Riserva is an excellent partner to rich, savory dishes such as grilled or roasted beef, lamb cutlets with herbs, venison and other game, or braised short ribs. It also pairs beautifully with aged hard cheeses like Parmigiano Reggiano or mature pecorino, as well as truffle dishes and mushroom ragù. Serve at 16–18°C (60–64°F) in large Bordeaux-style glasses to let the aromas unfold fully. Decanting for 1–2 hours is recommended in its youth to soften the tannins and open up the bouquet; older bottles will need a gentler, shorter decant mainly to separate any sediment.
