Tasting Notes
In the glass, the 2022 Campaner Cabernet Sauvignon Riserva shows a deep ruby core with garnet highlights, bright and youthful yet already hinting at complexity. The nose opens with ripe blackcurrant and blackberry, followed by dark cherry, graphite, and subtle notes of cedar, tobacco leaf, and sweet baking spices from careful oak aging. Hints of dried herbs, pepper, and a delicate floral lift speak clearly of its cool, alpine origin.
On the palate, this is medium to full-bodied, with polished tannins and a vibrant line of acidity that keeps the dark fruit focused and precise. Layers of cassis, black plum, and mulberry are framed by nuances of cocoa, espresso, and toasted oak, leading into a long, savory finish with notes of graphite and Mediterranean herbs. Production
The grapes for Caldaro Cabernet Sauvignon Riserva Campaner are sourced from select hillside vineyards around Lake Caldaro in Alto Adige, where warm days, cool nights and well-drained calcareous and gravelly soils give Cabernet both ripeness and structure. Yields are kept low, with hand harvesting to ensure optimal fruit selection at the perfect point of maturity. After gentle destemming and fermentation in temperature-controlled tanks, the wine undergoes extended maceration to extract color and fine tannins, followed by maturation in oak barrels (often a mix of barrique and larger formats) to integrate structure and add subtle spice without overpowering the fruit. The Riserva designation reflects both its elevated selection and its longer aging before release.

This Cabernet Sauvignon Riserva is a natural partner for richly flavored dishes such as grilled or roasted red meats, lamb chops with rosemary, braised beef, game, and mature hard cheeses like aged Parmigiano-Reggiano or pecorino. It also works beautifully with earthy mushroom dishes and slow-cooked ragù over polenta or fresh pasta.
