Ca’Di Rajo Sangue del Diavolo 2021 is a bold, characterful red from Veneto that showcases the personality of the local Raboso grape. With part of the fruit dried before vinification and extended aging in oak, it delivers impressive depth, structure, and spice in a style that feels both traditional and thoroughly modern.

Tasting Notes
Deep ruby in the glass, this wine opens with an inviting aromatic mix of ripe dark berries, plum, warm spice, and a subtle earthy edge. The oak maturation adds notes of vanilla, tobacco, and a gentle savoury tone that gives the nose extra complexity. On the palate it is robust and full-flavoured, with firm structure, lively freshness, and layers of mature fruit, spice, and dark cherry. The partial drying of the grapes adds concentration and richness, while the 24 months in oak bring texture and length. This is a wine with good aging potential, where the spicy, structured character should continue to evolve gracefully over time.

Production
Made from Raboso, a traditional local variety of Veneto, Sangue del Diavolo reflects the region’s climate and historic growing methods. Ca’Di Rajo’s vineyards sit in a unique area between the Adriatic coast and the foothills of the Dolomites, where good airflow and strong sunlight support healthy ripening. Around 10% of the grapes are dried before fermentation to increase concentration, and the wine is then matured for at least 24 months in oak to build complexity and structure.

Food & Serving
This is an excellent food wine, especially with hearty dishes such as braised beef, game, roast lamb, rich pasta with meat sauce, and aged cheeses. Serve at 16–18°C, and consider decanting for about an hour to allow the wine to open fully and soften its tannins.

Based in a key area of the historic Prosecco zone, the estate is known for balancing innovation with deep respect for local tradition.
