Ca’Di Rajo’s Cuvée Del Fondatore Valdobbiadene Prosecco Millesimato 2022 is a refined Brut from one of the most respected names in the Prosecco zone. Made entirely from Glera and given a longer maturation than most Proseccos, it offers a more layered and polished expression of Valdobbiadene’s Cru-level character.

Tasting Notes
In the glass, this Millesimato shows the bright, persistent sparkle expected of quality Valdobbiadene Prosecco, with a pale straw color and elegant mousse. The nose is fresh and expressive, with notes of green apple, pear, white flowers, and a subtle citrus lift, supported by a clean mineral edge. On the palate, it is crisp and finely balanced, with a dry Brut profile, lively acidity, and a fruit-forward core that remains precise rather than heavy. The longer maturation adds a little extra depth and finesse, making the wine feel more complete and giving it a more serious, food-friendly structure. Best enjoyed young and fresh for its vibrant aromatics, though it can hold well for a short period thanks to its balance and vinous character.

Production
Ca’Di Rajo is located in Veneto, in an area where the influence of the Venetian plain meets the foothills leading toward the Dolomites, giving the vineyards a strong regional identity and excellent conditions for fresh, aromatic wines. The estate combines local tradition with modern vineyard management, including the historic Bellussera training system on more than 20 hectares, where vines are trained high above the ground to improve airflow, reduce mildew pressure, and maximize sunlight exposure. For this wine, Glera grapes from Valdobbiadene are selected and vinified to produce a Brut-style sparkling wine with extended aging for greater complexity and refinement.

Food & Serving
This Prosecco works beautifully as an aperitif, but it also pairs well with light starters, seafood, sushi, fried appetizers, soft cheeses, and delicate white meats. Serve well chilled at around 6–8°C; decanting is not necessary.

Ca’Di Rajo is a family-run estate founded in 1931 and now led by the third generation of the Cecchetto family: Simone, Alessio, and Fabio. The winery is known for blending innovation with respect for local heritage, and its vineyards reflect that philosophy through both native and international varieties as well as the traditional Bellussera planting method. With its strong roots in the Prosecco heartland, Ca’Di Rajo has become an important and admired producer in Veneto.
