Tasting Notes
In the glass, Ilmerlot 2015 shows a deep ruby core with garnet highlights forming at the rim, reflecting its evolving complexity. The nose opens with succulent black cherry and ripe plum, followed by layers of blackberry compote, dried violets, and a touch of cured tobacco. With air, more nuanced aromas emerge—dark chocolate, sweet baking spices, cedarwood, and a gentle hint of graphite and forest floor.
On the palate, this is a full-bodied yet poised Merlot, with concentrated dark fruit framed by vibrant Lombard acidity. Silky, fine-grained tannins support flavors of black cherry, cassis, and plum, intertwined with mocha, licorice, and subtle vanilla from careful oak aging. The finish is long and persistent, with a savory mineral edge and a faint note of roasted coffee. The 2015 vintage, from a warm, balanced growing season, is drinking beautifully now but has the structure to develop further complexity over the next 6–10 years when properly cellared.
Production
Ilmerlot 2015 is sourced from select hillside vineyards in Lombardy, where Merlot benefits from a temperate climate, cool evening breezes from the nearby Alps, and well-drained, morainic soils rich in minerals. Yields are intentionally kept low, and grapes are harvested by hand at optimal ripeness, with strict selection both in the vineyard and at the winery to ensure only the best clusters are used. Fermentation takes place in temperature-controlled tanks to preserve varietal purity, followed by extended maceration to extract color, flavor, and fine tannins. The wine is then aged in small oak barrels—largely French—allowing it to gain complexity, texture, and aromatic depth without overpowering the fruit, before being bottled and rested to harmonize prior to release.

Ca' del Bosco Ilmerlot 2015 is a natural match for richly flavored dishes such as roast lamb, braised beef, ossobuco, or slow-cooked ragù with pappardelle. It also pairs beautifully with aged hard cheeses, truffled dishes, mushroom risotto, and grilled game birds. For optimal enjoyment, serve at 16–18°C (60–64°F). Decanting for 45–60 minutes before serving will help the wine open up, soften its tannins, and reveal its full aromatic complexity.
