Made in the traditional method with extended lees aging, it offers a profile that is both incisive and complex, ideal for those who appreciate grower-style sparkling wines. This non-vintage cuvée reflects Buvoli’s fanatical focus on Pinot Nero and his mission to create Metodo Classico wines that can stand alongside the best in Europe.

Tasting Notes
In the glass, the Super Sei Blanc de Noirs shows a luminous straw-gold hue with delicate copper glints, backed by a persistent, fine mousse that speaks to long lees aging and careful bottle fermentation. The nose is precise and inviting, with notes of yellow apple, ripe pear and citrus peel layered over hints of white flowers, brioche, toasted hazelnut and a subtle chalky minerality. On the palate, it is dry and taut, as the Extra Brut dosage keeps the focus on purity and structure rather than sweetness. You can expect a vibrant, saline backbone with flavors of orchard fruit, lemon zest, fresh pastry, and a gentle red-fruited nuance from the Pinot Nero core. The texture is creamy yet lifted, with very fine bubbles and a long, clean, mineral finish. As a non-vintage Metodo Classico with serious lees contact, it drinks beautifully now but can gain further complexity over 3–5 years in bottle, developing more nutty and toasty notes with time.

Production
Buvoli – L'Opificio del Pinot Nero works primarily with high-quality Pinot Nero grown in selected cooler sites in Veneto, where well-drained soils and significant diurnal temperature shifts help preserve acidity and aromatic finesse. Grapes are harvested by hand at relatively low yields to ensure concentration and freshness, with careful sorting in the vineyard and at the cellar. After gentle pressing of whole clusters to obtain only the purest free-run juice, the base wine is fermented at controlled temperatures in stainless steel (and sometimes a portion in neutral barrels, depending on the lot) to preserve finesse and detail. The second fermentation takes place in bottle according to the Metodo Classico, followed by an extended period of aging on the lees, which contributes texture, complexity, and the fine, persistent perlage. The wine is finished with a very low Extra Brut dosage to highlight the terroir-driven character of Pinot Nero.

Food & Serving
This Blanc de Noirs is a versatile, gastronomic sparkling wine that shines with refined appetizers and delicate mains. It pairs beautifully with oysters, crudo, sushi and sashimi, as well as carpaccio, tartare, or lightly smoked fish. It also complements poultry dishes, shellfish risotto, tempura, and soft-rind cheeses such as Brie or Camembert. Serve well-chilled at about 8–10°C (46–50°F); if possible, pour it into a white wine glass rather than a narrow flute to allow the aromas to fully open. A brief 10–15 minutes in the glass serves as a gentle “mini-decant,” helping the wine express its breadth and fine autolytic complexity.
