Bruno Paillard Champagne Grand Cru Blanc de Noirs Extra Brut is a refined expression of Pinot Noir from some of Champagne’s finest Grand Cru vineyards. Crafted as a multi-vintage cuvée, it blends the character of several harvests to capture a complete, nuanced portrait of northern Champagne’s Pinot Noir. Dry, precise and impeccably balanced, this is a Blanc de Noirs that focuses on purity of fruit and elegance over sheer power.

Tasting Notes
In the glass, this Champagne shows a luminous, pale golden hue with delicate, persistent bubbles forming a fine mousse. The nose opens with precise aromas of red apple skin, wild strawberry and white cherry, layered with notes of citrus zest, fresh brioche, chalk and a subtle hint of roasted hazelnut. On the palate, the Extra Brut dosage highlights the wine’s tension and minerality: vibrant acidity and a firm, finely etched structure frame flavors of raspberry, mirabelle plum, blood orange and crunchy pear. Underneath, there is a distinct chalky salinity and a touch of spice that lengthens the finish. Elegant yet concentrated, it is drinking beautifully now for its energy and precision, and it has the structure to evolve gracefully for 5–8 years in a good cellar, gaining complexity and creamier texture over time.

Production
Sourced exclusively from Grand Cru vineyards in the cooler, northern reaches of the Champagne region, this Blanc de Noirs reflects chalk-rich soils and a fresh, maritime-continental climate that favor finesse over heaviness in Pinot Noir. Grapes are hand-harvested at optimal ripeness, carefully sorted and gently pressed to extract only the purest first-press juice. Vinification is carried out cru by cru and vintage by vintage, allowing Bruno Paillard to build a precise multi-vintage blend that balances freshness and depth. A portion of reserve wines adds complexity and continuity of house style, while the long aging on lees in bottle—followed by an Extra Brut dosage—preserves tension, fine bubbles and a clean, dry finish that lets the terroir speak clearly.

Food & Serving
This Champagne’s structure and dryness make it a versatile partner at the table. It pairs beautifully with oysters, scallop carpaccio, sashimi, and delicate white fish, but also stands up to richer dishes like lobster, poultry in light cream sauces, veal tartare, charcuterie and aged hard cheeses. Serve well chilled, ideally at 8–10°C (46–50°F), to showcase its precision and minerality. A brief decanting in a wide-bottomed carafe, or simply pouring the first glass and giving it a few minutes in the glass, can help the aromatics open and reveal additional layers of fruit and brioche complexity.
