Tasting Notes
In the glass, Dosage Zéro typically shows a pale, luminous straw color with fine, persistent bubbles forming an elegant mousse. The nose is focused and precise, opening with citrus zest, green apple and pear, followed by hints of chalk, white flowers, fresh brioche and a faint saline note that underlines its mineral spine.
On the palate, this Champagne is dry, taut and linear, with a racy acidity that gives it real energy and length. Production
Bruno Paillard works with carefully selected vineyards across the Champagne region, many on chalk-rich soils that contribute to the cuvée’s notable minerality and tension. The grapes—Chardonnay, Pinot Meunier and Pinot Noir—are harvested by hand to ensure optimal selection and are pressed gently, often using only the finest first press juice to preserve finesse and purity. Fermentation typically occurs in a mix of stainless steel and, for a portion of the wines, small oak or neutral vessels to build texture without overt wood influence. As a multi-vintage cuvée, it draws on reserve wines to achieve balance and consistent style, then undergoes a second fermentation in bottle and a prolonged maturation on the lees. At disgorgement, no dosage is added, allowing the natural balance of fruit, acidity and minerality to define the final wine.
