Tasting Notes
In the glass, it typically shows a golden amber hue. The nose opens with earthy peat smoke, maritime salt, citrus zest and a gentle sweetness, before revealing layers of vanilla, barley, dried herbs and a faint medicinal edge. On the palate, it is full-bodied and textured, with ashy smoke, sweet malt, brine, toasted oak, lemon peel and a peppery warmth that builds gradually. The finish is long, smoky and mineral, with lingering sea spray, oak spice and a clean phenolic note. While approachable now, it also has enough structure and complexity to reward continued bottle aging over the medium term.

The spirit is made using heavily peated malt and matured in a combination of carefully selected casks, typically including American oak and sherry cask influence, to build depth without masking the smoke. Food & Serving
Best enjoyed neat or with a few drops of water to open the smoky aromatics. It pairs well with grilled meats, charred seafood, smoked salmon, aged cheddar, oysters, or even dark chocolate. Serve at room temperature and decanting is not necessary, though allowing a few minutes in the glass can help the layers of peat and citrus emerge.
