Made without dosage, it highlights the unadorned expression of the Marne Valley’s fruit and the domaine’s meticulous, low-intervention approach. Rooted in four generations of family know-how, this cuvée bridges tradition and modern biodynamic farming in one precise, terroir-driven bottling.

Tasting Notes
In the glass, BD'N Blanc de Noirs Brut Nature typically shows a luminous, pale gold hue with fine, persistent bubbles that form a delicate bead. On the nose, expect a vibrant aromatic profile: red apple skin, ripe pear and Mirabelle plum, layered with notes of brioche, roasted hazelnut, chalky minerality and a faint hint of dried flowers and citrus zest. The palate is dry, tense and incisive, as you’d expect from a brut nature, yet cushioned by ripe, fleshy fruit. Flavors of orchard fruits, white cherry and blood orange are intertwined with subtle spice, crushed stone and a saline, mouthwatering finish. The structure is driven by both fruit concentration and a firm backbone of acidity, giving the wine impressive length and definition. As a non-vintage Champagne with extended lees aging, it is delicious now for its vibrancy, but it also has the capacity to evolve over the next 3–5 years, gaining more savory, toasty and nutty complexity.

Production
Domaine Bourgeois-Diaz farms about seven hectares divided into thirty small parcels around Crouttes-sur-Marne and neighboring communes in the western Marne Valley. The vineyards sit on classic Champagne soils of limestone and clay, with predominantly south-west exposures that promote even ripening while preserving freshness. Since 2010, no herbicides or synthetic products have been used, and the estate has been progressively converted to biodynamics, with around four hectares now fully certified organic. Harvesting is done by hand, with strict selection to ensure only perfectly ripe grapes reach the press. In the cellar, the juice is gently extracted using traditional presses, then vinified in a mix of stainless steel tanks and oak barrels, depending on the character of the year and the parcel. The base wines for this cuvée undergo extended maturation on the lees, and the finished Champagne rests a minimum of around 24 months in the cellar before disgorgement, with no dosage added to preserve its pure, terroir-driven profile.

Food & Serving
This Brut Nature Blanc de Noirs is a versatile food Champagne, ideal with dishes that benefit from both structure and freshness. Pair it with charcuterie, rustic pâtés, poultry terrines, or richer seafood such as scallops, crab, lobster, or salmon tartare. It also shines alongside roast chicken, veal in light cream sauces, mushroom dishes, and aged hard cheeses. Serve well chilled, ideally at 8–10°C (46–50°F), allowing it to warm slightly in the glass to reveal more aromatic complexity. A brief decant of 10–15 minutes in a chilled carafe, or simply opening the bottle a little ahead of serving, can help the wine unfurl its full breadth of aromas.
