Created to celebrate Bortolomiol’s 70th anniversary, this limited-edition Valdobbiadene Prosecco Superiore Rive di Col San Martino Extra Brut 2023 showcases the very best of steep-slope, hand-crafted Prosecco. Only 8,000 numbered bottles were produced, each dressed with an elegant silver-foil label to underline its celebratory, collectible character. Sourced from a single, sun-drenched vineyard on the dramatic hillsides of Col San Martino, this millesimato Extra Brut pays tribute to both the estate’s pioneering history and the UNESCO-listed landscape of Valdobbiadene.

Tasting Notes
In the glass, this Prosecco Superiore shows a luminous, pale straw-yellow hue with fine, persistent bubbles that form a delicate, creamy mousse. The visual impression is one of purity and precision, hinting at the wine’s dry, mineral-driven style. On the nose, it opens with refined aromas of white flowers, green apple, crisp pear, and citrus zest, layered with subtle notes of fresh herbs, almond and a light chalky minerality that reflects its hillside origin. The palate is taut and vibrant, with a bone-dry Extra Brut profile that emphasizes tension over sweetness: expect crunchy orchard fruit, lemon and grapefruit, a hint of unripe peach, and a saline, stony backbone. The mousse is finely textured and elegant, supporting a long, clean finish where citrus, floral and mineral notes linger. Enjoyed now for its freshness and precision, it also has the structure to develop added complexity over the next 2–4 years, gaining more autolytic nuances of bread crust and biscuit with further time on cork.

Production
The grapes for this wine come from a single, steeply sloping vineyard in Col San Martino, one of the prized “Rive” sites at the heart of the Valdobbiadene Prosecco Superiore DOCG. Here, the Glera vines cling to hillside terraces with excellent sun exposure and well-drained, predominantly rocky and mixed alluvial soils, which naturally limit yields and concentrate flavor. Due to the incline and the fragility of the terrain, all vineyard work—from pruning to harvest—is done entirely by hand, often under demanding conditions. The grapes are picked at optimal ripeness and gently pressed to preserve delicate aromatics, followed by a cool, temperature-controlled primary fermentation in stainless steel to maintain freshness and varietal purity. The base wine then undergoes its secondary fermentation in pressure tanks (Charmat-Martinotti method), with an extended period on the lees to build texture and finesse. Finished in an Extra Brut dosage, the low sugar level allows the terroir of Col San Martino to shine with precision and clarity.

Food & Serving
This focused, dry Extra Brut Prosecco Superiore is an excellent match for refined, delicately flavored dishes that benefit from crisp acidity and subtle complexity. Try it with oysters, carpaccio of white fish, scallop crudo, sushi and sashimi, or simple grilled prawns with lemon and herbs. It also pairs beautifully with fresh goat cheese, burrata with tomatoes and basil, light vegetable tempura, and delicate seafood pastas or risotti. Serve well-chilled at 6–8°C (43–46°F) to highlight its linear, mineral character. Decanting is not necessary, but opening the bottle a few minutes before serving and pouring into tulip-shaped sparkling wine glasses will help the aromas open up gracefully.
