Description
Pavillon Blanc du Château Margaux is the rare white wine of one of Bordeaux’s most celebrated estates, offering a distinctive alternative to its legendary red wines. Produced in very limited quantities, it combines the freshness and aromatic precision of Sauvignon Blanc with the refinement, depth and ageing potential associated with Château Margaux. The estate’s winemaking history reaches back to the 12th century, making this a bottle with both exceptional pedigree and historical significance.
Tasting Notes
The 2021 vintage displays a bright, pale straw colour with youthful silvery highlights. Its nose is expressive yet precise, revealing citrus zest, white peach, pear and fresh herbs, complemented by subtle floral notes and a delicate mineral character. On the palate, it is energetic and finely textured, with vibrant acidity supporting flavours of grapefruit, lemon, orchard fruit and gently saline minerality. Carefully integrated oak adds breadth without overwhelming the wine, while the long, focused finish brings both freshness and elegance.
Although approachable in its youth, Pavillon Blanc du Château Margaux has the structure and concentration to develop beautifully in bottle. With proper cellaring, the 2021 can gain complexity over the next decade or more, developing richer fruit, honeyed nuances and additional mineral depth while retaining its characteristic freshness.
Production
The wine comes from Château Margaux’s gravel- and clay-influenced terroir in the Médoc, where well-drained soils encourage concentration while the gravel helps preserve freshness. Produced primarily from Sauvignon Blanc, the grapes are carefully selected and harvested by hand to capture both purity and balance. The wine is vinified with a combination of traditional expertise and modern precision, including fermentation and maturation in oak, generally on the lees, to build texture and complexity while preserving the variety’s aromatic brightness.
Food & Serving
Pavillon Blanc du Château Margaux is an elegant partner for seafood and refined white-meat dishes, including oysters, scallops, grilled lobster, roast chicken and turbot with a light butter or citrus sauce. It also works well with asparagus, fresh goat’s cheese and delicate vegetarian dishes. Serve lightly chilled at around 10–12°C. Decanting is not essential, but a short decant of 20–30 minutes can help the wine open, particularly when served young; older bottles are best handled gently and poured soon after opening.
