Tasting Notes
In the glass, the wine is expected to show a deep ruby colour with youthful violet highlights. Its bouquet is intensely aromatic, combining wild strawberry, raspberry and black cherry with violets, rose petal, forest floor, spice and finely integrated oak. With air, the perfume should gain further complexity and nuance. The palate is concentrated yet poised, offering vibrant red and dark fruit, silky tannins and the mineral energy characteristic of Bonnes-Mares. Notes of earthy spice, cocoa and subtle savoury tones add depth to a long, persistent finish. The 2020 vintage offers both immediate generosity and the structure to develop beautifully over 15–25 years, with careful cellaring.

Production
Bonnes-Mares is a prestigious Grand Cru vineyard on the boundary between Chambolle-Musigny and Morey-Saint-Denis, known for its limestone-rich soils and naturally powerful, mineral style. Domaine Georges Roumier farms its parcels with a focus on low yields and careful vineyard work, followed by selective harvesting and traditional red-wine vinification. The wine is matured in French oak, allowing the fruit, terroir and natural structure to develop without obscuring the vineyard’s character.

Food & Serving
Serve at approximately 16–18°C after allowing the bottle to rest and come gradually to temperature. A careful decant of around 30–60 minutes may help reveal the wine’s aromatic complexity in its youth, although older bottles are best opened gently and decanted only if necessary. Pair it with roast or game birds, duck, venison, beef tenderloin, mushroom dishes, or refined preparations of lamb. Its depth also makes it a natural match for dishes featuring truffle or earthy wild mushrooms.
