Tasting Notes
In the glass, the 2018 Pluribus shows a deep granate-purple hue, almost opaque at the core, signaling its youth and concentration. The nose is initially restrained but quickly unfurls with coaxing, revealing layers of wild blueberries, ripe black plums, and warm cassis, interwoven with darker tones of tilled earth, black truffle, menthol, and fine tobacco leaf. Subtle hints of graphite and spice add further complexity as it opens. On the palate, this is full-bodied and densely packed, built on tightly coiled dark blue and black fruits that ripple across the tongue with impressive tension. Firm, grainy tannins provide a powerful but refined structure, while a vibrant acid backbone keeps everything lifted and focused. The finish is exceptionally long, echoing with earthy, savory nuances and mineral notes that promise further development. This is a wine with serious aging potential: expect it to evolve beautifully over 15–25 years or more, gaining aromatic nuance and textural polish with time.

Production
Pluribus is sourced from a singular, high-elevation vineyard on Spring Mountain, where steep slopes, rocky soils, and cooler mountain conditions combine to produce concentrated yet finely etched Cabernet Sauvignon. The site’s well-drained, low-vigor soils naturally limit yields, resulting in small, intensely flavored berries. Harvest is conducted by hand, often in multiple passes, to ensure only perfectly ripe clusters are selected. In the cellar, Bond employs meticulous sorting and gentle handling, followed by fermentation in temperature-controlled vessels to preserve purity of fruit and capture the vineyard’s character. The wine is then aged in high-quality French oak barrels, a significant portion new, allowing the structure to integrate and the complex aromatic profile to unfold without overshadowing the terroir.

Food & Serving
This is a serious, structured Cabernet that shines alongside equally flavorful and refined dishes. Think dry-aged ribeye, slow-braised short ribs, roast lamb with herbs, or venison with truffle accents. Mature hard cheeses such as aged Comté, Pecorino, or a well-aged cheddar also make excellent partners. Serve at 16–18°C (60–65°F) for optimal expression. In its youth, decanting for 2–3 hours is strongly recommended to help the wine open up and reveal its full aromatic and textural complexity; older bottles (10+ years) can be decanted more gently for about an hour to remove sediment and allow the bouquet to bloom.
