Crafted from a Pinot Noir-led blend and released “Recently Disgorged,” it showcases Bollinger’s signature richness, precision, and patience in the cellar. It is a Champagne with serious pedigree, made for those who appreciate complexity, power, and age-worthy finesse.

Tasting Notes
In the glass, it shows a refined golden hue with a fine, persistent mousse. The nose is layered and expressive, with notes of ripe orchard fruit, citrus peel, toasted brioche, hazelnut, and subtle spice, evolving with time in the glass into more savoury, honeyed nuances. On the palate, it is broad and vinous, yet beautifully lifted by the freshness of the 2008 vintage. The Pinot Noir gives structure, depth, and a dry, powerful core, while Chardonnay brings elegance, tension, and length. The finish is long, complex, and mineral-driven, with impressive ageing potential; although it is already beautifully developed, it will continue to unfold over many years.

Production
Bollinger R.D. 2008 is made from 34% Chardonnay and 66% Pinot Noir, sourced from carefully selected parcels in Champagne. The first fermentation takes place in oak barrels, which adds texture, depth, and subtle oxidative complexity, while the wine matures under cork during extended lees ageing to encourage a slow and harmonious evolution. The “Recently Disgorged” concept means the wine is disgorged just before release, preserving both maturity and vibrant freshness.

Food & Serving
This is a Champagne that shines with refined dishes such as lobster, scallops, sashimi, roast poultry, truffled risotto, or aged Comté and Parmesan. Serve chilled at around 8–10°C, and consider giving it a little time in the glass to open up. Decanting is not essential, but a brief aeration can help reveal its full aromatic complexity if the bottle is especially young on release.
