Tasting Notes
In the glass, it shows a bright, clean appearance with a refined, vibrant character. The nose is delicate and expressive, with the hallmark Verdejo notes lifted by a subtle, polished sense of freshness. On the palate, the wine is exceptionally smooth, with especially soft acidity and an elegant, understated profile that feels both precise and approachable. There is a lovely balance between freshness and texture, and while it is immediately enjoyable, the quality of fruit and careful winemaking suggest it will hold well over the near term.

Production
The grapes come from the chemical-free "El Viejo" parcel in the "Pago de Fuente Elvira" vineyard in La Seca, where 50-year-old vines grow in stony soils over a clay subsoil. The combination of old vines and poor, mineral-driven soils contributes depth and character to the wine. Fermentation takes place with wild yeasts in small stainless-steel tanks in a cooled room at 13-14°C, followed by three months on the lees and an additional three months of bottle aging.

Food & Serving
This Verdejo is a natural partner for seafood, grilled white fish, oysters, sushi, light salads, and fresh goat cheese. Serve chilled at around 8-10°C to best preserve its freshness and detail, and decanting is not necessary.
