Tasting Notes
In the glass, the 2020 Fuente de San Lázaro shows a deep, vibrant ruby core with purple highlights, hinting at both concentration and youthful energy. The nose is lifted and aromatic, with red and black fruits—think wild cherry, blackberry and redcurrant—layered over dried violets, subtle graphite, cracked pepper and a touch of smoked herbs and spice from time in oak.
On the palate, this Mencía is medium-bodied but intense, with a refined structure. Juicy red and dark berries are supported by a lively, almost saline acidity and fine-grained tannins that give a firm yet silky grip. Notes of licorice, black tea, crushed stone and a gentle, toasty nuance carry through to a long, precise finish. It drinks beautifully now after a bit of air, but the balance of fruit, acidity and tannin suggests very good aging potential over the next 6–8 years, gaining complexity and savory depth with time in bottle.
Production
The grapes for Fuente de San Lázaro come from selected plots in Bierzo, where Mencía thrives on steep slopes with a mix of slate, quartz and clay soils, giving the wines their hallmark minerality and freshness. Vines are typically low-yielding and many are older plantings, tended by hand due to the terrain. Harvesting is usually carried out manually, allowing careful selection of bunches at optimal ripeness. In the cellar, Bodegas Demencia de Autor works with a minimally interventionist approach: gentle destemming, controlled fermentation in small vessels, and careful extraction to preserve elegance rather than heaviness. The wine is then matured in a combination of used and, in some cases, lightly toasted French oak barrels to refine texture and add subtle complexity without overwhelming the purity of the fruit.
Food & Serving
This Bierzo Mencía pairs beautifully with a wide range of dishes, especially those that echo its savory, herbal notes. Try it with grilled lamb chops, roasted pork with herbs, duck breast, charcuterie, or earthy dishes like mushroom risotto, lentil stew and roast root vegetables. Hard and semi-hard cheeses—such as Manchego, aged Gouda or a mature goat’s cheese—also make an excellent match. Serve at around 15–17°C to show off its aromatic lift and freshness; if the wine is very young or just opened, a short decant of 30–45 minutes will help the tannins soften and allow the floral and mineral nuances to fully emerge.
