On the palate, it’s medium-bodied yet elegant, with a mouth-filling texture balanced by crisp, saline acidity. Production
The Godello grapes for Demencia 2023 are sourced from high‑altitude vineyards in Bierzo, where slate and clay-limestone soils, cooling Atlantic breezes and marked day–night temperature shifts help preserve freshness while building flavour depth. The fruit is typically harvested by hand to ensure careful selection of healthy, optimally ripe bunches. In the cellar, fermentation takes place in temperature-controlled vessels to protect aromatic purity, often followed by aging on fine lees to enhance texture and complexity without overwhelming the wine’s natural minerality. The result is a precise, terroir-focused expression of Godello that reflects both the region’s soils and its Atlantic-influenced climate.

This Godello is a versatile food wine, pairing beautifully with seafood such as grilled prawns, octopus, steamed mussels, or simply prepared white fish.
