Description
Bodegas Chaves Castel de Fornos Albariño 2025 is a distinctive white wine from the Val do Salnés subzone of Rías Baixas, one of Spain’s leading regions for fresh, maritime-influenced wines. Made exclusively from hand-harvested Albariño grapes and aged on its lees, it combines Atlantic freshness with added texture and complexity. Bodegas Chaves has been producing Albariño in Galicia since 1955 and is regarded as the oldest winery in the Rías Baixas appellation.
Tasting Notes
Bright and elegant in appearance, this Albariño reflects its cool Atlantic surroundings with a fresh, lively character. The nose is expected to show fragrant citrus and orchard-fruit aromas, complemented by a subtle mineral and saline impression from the vineyard’s coastal location.
On the palate, the wine offers crisp acidity and refreshing fruit, balanced by a rounded, creamy texture developed during three months of sur lie ageing. Its granite, clay and sandy soils, together with the maritime climate, lend the wine a precise, mineral freshness. Enjoy the 2025 vintage in its youth for its vibrancy, or over the following few years as its lees-derived complexity develops further.
Production
The Castel de Fornos vineyard lies near the villages of Cambados and Ribadumia in Val do Salnés, on a south-facing hillside just 60 metres above sea level and close to the Atlantic Ocean. Its stony granite, clay and sandy soils, terraced layout and pergola-trained vines allow the coastal winds to circulate freely. The Albariño grapes are picked entirely by hand and transported in small crates before gentle pressing; only the first-press juice is used. Fermentation takes place at a controlled 16°C, followed by three months of ageing on the lees and a further three months in stainless-steel tanks before bottling.
Food & Serving
Serve chilled at approximately 8–10°C. Its bright acidity and lightly creamy texture make it an excellent partner for oysters, mussels, prawns, grilled fish, ceviche and other shellfish, while its freshness also works well with salads, sushi and soft goat’s cheese. Decanting is not normally necessary, although opening the bottle shortly before serving can allow the wine’s aromas to unfold.
Producer
Bodegas Chaves is a family-owned producer based in Galicia, a part of Spain noted for its strong tradition of white-wine production. Established in 1955, the winery is the oldest house in the Rías Baixas appellation and has built its reputation on attractive, expressive Albariño wines. Alongside its Rías Baixas range, the family also produces wines under the Silva Daponte name, including Godello and Mencía from Monterrei and spicy Treixadura from Ribeiro.
