Bodegas Anadas’ CariñenaCare XCLNT 2021 is a characterful red from the historic DO Cariñena, one of Spain’s oldest wine regions. Made under the winery’s CARE project—named after the ancient Roman name for Cariñena—the wine reflects the estate’s careful approach to vineyard selection and precise winemaking, with the region’s warm, continental climate at its heart.

Tasting Notes
The 2021 vintage is expected to show a deep ruby-red appearance, with ripe red and dark fruit aromas supported by subtle spice and gentle oak nuances. On the palate, it offers generous fruit, rounded texture and balanced tannins, with the warmth and concentration typical of Cariñena reds. French oak contact during malolactic fermentation adds depth and polish without overshadowing the fruit. It should be enjoyable now, while careful cellaring may allow the wine to develop greater savoury complexity over the next few years.

Production
Produced in the DO Cariñena, the wine comes from Bodegas Anadas’ carefully selected vineyards in the region’s warm, continental terroir. The winery follows a traditional method beginning with a period of cold maceration, after which fermentation takes place at 25°C. Malolactic fermentation is carried out in French oak barrels, helping to build a smoother texture and added aromatic complexity. The precise grape composition and harvesting method for this cuvée have not been specified.

Food & Serving
A natural partner for grilled or roasted steak, beef dishes and richly flavoured game, this red also works well with hearty stews, roasted vegetables and mature cheeses. Serve slightly below room temperature, around 16–18°C. Decanting is not essential, but 20–30 minutes in a decanter can help the wine open up, particularly when served young.
