Bodega Soto Manrique’s La Viña de Ayer Garnacha Tinto 2021 is a fresh, expressive red from Cebreros, a high-altitude area known for producing elegant Garnacha with remarkable natural acidity. Made from old vines rooted in granite and slate soils, it combines juicy red-fruit character with a light, fluid style and impressive length.

Tasting Notes
Bright ruby-red in the glass, this Garnacha opens with lively aromas of red berries and subtle floral notes. The palate is fresh and succulent, with a light-bodied texture, vibrant acidity and a pleasingly persistent finish. Its balance and freshness make it approachable now, while careful cellaring for several years should allow the fruit and mineral nuances to develop further.

Production
The grapes come from traditional Garnacha vineyards around Cebreros, where granite and slate soils contribute freshness, structure and a distinctive sense of place. Before vinification, the grapes are chilled to 0°C to preserve their aromatic purity. Alcoholic fermentation takes place in concrete tanks, followed by 12 months of maturation in 20-hectolitre foudres, allowing the wine to gain complexity without overshadowing its delicate fruit profile.

Food & Serving
Serve slightly cool, at approximately 14–16°C. This bright and juicy Garnacha pairs well with grilled chicken, roast pork, charcuterie, mushroom dishes, lentils and roasted vegetables. It generally does not require decanting, although a short airing in the glass or a brief decant can help reveal its floral aromas and mineral character.

Based in Cebreros, the estate is dedicated to recovering old, small vineyards planted with Garnacha and Albillo Real. Its wines focus on expressing the authenticity of the local terroir, helping highlight Cebreros’ reputation for refined, high-altitude wines from granite and slate soils.
