Bodega Cebreros El Galayo 2023 is a fresh, expressive Garnacha from the high-altitude vineyards of Cebreros in Spain’s Sierra de Gredos. Made with respect for the land, local growers and traditional methods, it offers an accessible yet characterful expression of this increasingly recognised mountain wine region.

Tasting Notes
The wine has a clear ruby-red colour of medium-light intensity. On the nose, it shows classic Garnacha aromas of strawberry, raspberry and red cherry, complemented by delicate aromatic spices and subtle floral notes. The palate is fresh, flavourful and lively, with bright acidity, supple fruit and a surprisingly persistent finish. Its balance of freshness and fruit makes it enjoyable in its youth, while the structure provided by the high-altitude fruit and six months in large French oak barrels should allow it to develop gracefully over the next few years. It is best appreciated while its vibrant red-fruit character remains at the forefront.

Production
El Galayo is produced from old Garnacha vineyards in the high-altitude terrain around Cebreros, where local growers care for the vines with a focus on sustainability and respect for the soil, environment and regional tradition. The grapes are harvested by hand and placed in 25 kg boxes before undergoing spontaneous fermentation in concrete vats. The wine is then aged for six months in large French oak barrels, preserving the freshness of the fruit while adding subtle depth and spice.

Food & Serving
Thanks to its fresh acidity and fruit-driven style, El Galayo is a versatile partner for grilled meats, sausages, roasted dishes and hearty stews. It also works well with roast vegetables, mushroom dishes and richly seasoned Mediterranean cooking. Serve slightly cool, at around 14–16°C. Decanting is not essential, though a brief 20–30 minutes in a decanter can help open the wine and reveal more of its floral and spicy character.
