Antinori Tormaresca Tenuta Bocca di Lupo Aglianico Castel del Monte 2021 is a powerful, terroir-driven red from the wild, sun-drenched hills of northern Apulia. Crafted entirely from estate-grown Aglianico, it captures the grape’s hallmark structure and depth with a distinctly southern Italian character. This is one of the flagship reds of the Castel del Monte area, showcasing how Aglianico can rival the great ageworthy wines of Italy when planted in the right soils and handled with precision.

Tasting Notes
In the glass, the 2021 Bocca di Lupo shows a deep, vibrant ruby hue with purple highlights, signaling both concentration and youthful energy. The nose opens with dark berries and sour cherry, followed by notes of wild herbs, dried rose, liquorice, and subtle spice from carefully judged oak. Hints of graphite, tobacco leaf, and warm stone underline its mineral origin. On the palate, this is full-bodied and firmly structured, with Aglianico’s trademark tannins wrapped around a core of black cherry, plum, and blackberry. Layers of cocoa, sweet spices, dried Mediterranean herbs, and a saline, almost volcanic minerality emerge with air. The acidity is bright and lifting, giving the wine tension and length rather than heaviness. Still very youthful in 2021, it benefits from a good decant now, and has excellent aging potential: expect it to develop more tertiary notes of leather, truffle, and dried fig over 10–15 years, and likely longer in good cellaring conditions.

Production
Tenuta Bocca di Lupo lies in the Castel del Monte appellation, in the Murgia plateau of northern Apulia, at around 250–300 meters above sea level. Here, Aglianico is planted on calcareous, rocky soils with volcanic influences, which naturally limit yields and give the wine its firm structure and distinct minerality. The estate is farmed with great attention to environmental balance, and grapes are harvested by hand at optimal ripeness to preserve freshness and phenolic depth. After careful sorting, the Aglianico is vinified in temperature-controlled tanks, with a long maceration on the skins to build complexity and extract fine tannins. The wine is then aged in French oak (largely barriques and tonneaux) for an extended period before bottling, followed by further bottle aging to harmonize its components and refine the texture.

Bocca di Lupo is a natural match for rich, savory dishes that can complement its structure and intensity. Think slow-braised lamb shank, ossobuco, hearty beef stews, venison, or grilled bistecca alla fiorentina; it also pairs beautifully with aged hard cheeses, porcini risotto, and dishes featuring truffle, rosemary, and thyme. Serve at 16–18°C (60–64°F) to highlight both fruit and spice, and decant for 1–2 hours in its youth to soften the tannins and allow the aromatic complexity to unfurl.
