Description
Billecart-Salmon Louis Salmon 2008 is a refined Brut Blanc de Blancs Champagne crafted exclusively from Chardonnay, showcasing the precision and elegance of this outstanding vintage. Disgorged in October 2020 with a carefully judged dosage of 7 g/L, it balances crystalline freshness with generous, layered complexity. Sourced from some of the Côte des Blancs’ most esteemed Grand Cru villages, this cuvée offers a rare combination of purity, depth and age‑worthy structure.
Tasting Notes
In the glass, Louis Salmon 2008 typically shows a luminous pale gold hue, animated by a fine, persistent mousse. The nose is both inviting and detailed, opening with aromas of crisp yellow apples and stone fruits, interwoven with dried white flowers, freshly baked bread, buttery pastry and a subtle twist of mandarin oil.
On the palate, the wine is full-bodied, fleshy and textural, yet driven by incisive acidity and a palpable mineral cut. Layers of ripe orchard fruit, citrus zest and delicate brioche unfold with air, supported by notable concentration and a chalky, saline backbone. The finish is long, fresh and penetrating, promising excellent aging potential; well-stored bottles should continue to develop added complexity and tertiary nuances over the next 10–15 years or more.
Production
Louis Salmon 2008 is sourced from prime Chardonnay parcels in the Côte des Blancs villages of Cramant, Le Mesnil-sur-Oger and Chouilly, with Chouilly accounting for roughly 40% of the blend. These chalk-rich slopes impart the wine’s hallmark tension, finesse and mineral drive. Grapes are hand-harvested at optimal ripeness to preserve acidity and aromatic purity, then gently pressed and vinified with meticulous care in temperature-controlled conditions. Following its primary fermentation, the wine undergoes extended aging on lees in bottle, enhancing its texture and complexity, before disgorgement in October 2020 with a dosage of 7 g/L to harmonize freshness and richness.
Food & Serving
This Champagne is a superb match for refined seafood dishes such as oysters, scallop carpaccio, turbot, sole meunière or lobster with a light butter sauce, as well as delicate poultry, fine sushi and caviar. Serve well chilled at around 8–10°C (46–50°F) to highlight its precision and vibrancy. A short decant in a wide-bowled Champagne glass or some time in the glass after pouring can help the wine open up its full aromatic and textural complexity.
