Billecart-Salmon Brut Reserve NV showcases the house’s refined Champagne style, combining Chardonnay-driven freshness with impressive depth and texture. This cuvée is sourced from three distinguished Côte des Blancs villages—Cramant, Mesnil-sur-Oger and Chouilly—and reflects the elegant, precise character for which Billecart-Salmon has been renowned since its foundation in 1818.

Tasting Notes
Bright and beautifully luminous in the glass, it opens with aromas of crisp yellow apple and ripe stone fruit, followed by dried white flowers, freshly baked bread, buttery pastry and a subtle note of mandarin oil. The palate is full-bodied, fleshy and richly textured, yet remains fresh and focused, with excellent concentration and a penetrating mineral edge. Its balanced structure allows it to be enjoyed now, while further bottle ageing should bring greater complexity and harmony.

Production
This Chardonnay-led Champagne draws on fruit from Cramant, Mesnil-sur-Oger and Chouilly in the Côte des Blancs, with Chouilly contributing approximately 40% of the blend. The wine was disgorged in October 2020 and finished with a dosage of 7 grams per litre, preserving its freshness while adding a refined sense of roundness and balance. Specific harvesting and cellar vinification details are not provided.

Food & Serving
Its combination of richness, freshness and fine Champagne character makes it an excellent partner for oysters, scallops, lobster, grilled fish and delicate poultry dishes. It also complements soft cheeses and savoury pastries particularly well. Serve well chilled at around 8–10°C. Decanting is not normally necessary, although allowing the wine a few minutes in a wide Champagne glass can help reveal its layered aromas.
