Tasting Notes
In the glass, it shows an intense ruby-red color that immediately signals depth and concentration. The nose opens with inviting notes of coffee, cocoa, and wild berries, creating a profile that feels both polished and layered.
On the palate, the wine is harmonious and complex, with a soft yet structured texture and excellent overall balance. The finish is very long and persistent, suggesting strong aging potential and the ability to develop further nuance over time.
Production
The grapes come from the hills of Fiesole, near Florence, where the vines grow in clay and galestro soils, with a particular affinity for granite-rich sand and rocky granite outcrops. The vineyards are farmed organically and sustainably, with Guyot-trained vines managed carefully to preserve quality and expression. In the cellar, fermentation takes place in large stainless-steel tanks with daily manual punch-downs to support color and aroma extraction, followed by aging in wooden casks for around 15 to 18 months.
Food & Serving
This is a great match for roast meats, game, and mature cheeses, where its structure and depth can shine. Serve it at around 16–18°C for the best expression, and decanting is recommended, especially when the wine is young, to help open up its aromatic complexity.
