Bibbiano Chianti Classico Gran Selezione Vigne di Montornello 2021 is a certified organic, single-vineyard expression of Sangiovese from Castellina in Chianti. As the estate’s highest Chianti Classico classification, Gran Selezione highlights the character of a carefully selected site, combining Tuscan freshness with refined structure and impressive depth. Bibbiano has been rooted in the region since 1865, giving this wine a strong connection to the estate’s long history.

Tasting Notes
The wine has a bright ruby-red colour with attractive violet hues. Its expressive nose opens with aromas of red cherry, black cherry and redcurrant, followed by hints of raspberry and Mediterranean scrub. On the palate, it is elegant and fresh, with a firm yet balanced structure, supple sweet tannins and a lingering finish marked by ripe fruit and subtle savoury nuances. This is a youthful wine with the concentration and structure to develop further in bottle. It can be enjoyed now with decanting, but should gain added complexity over the next several years and has the potential to mature gracefully for approximately 8–12 years, depending on storage conditions.

Production
The Sangiovese grapes come from the Vigne di Montornello vineyards in Castellina in Chianti, planted at approximately 270–310 metres above sea level on north-eastern slopes. The limestone-rich clay soils contain alberese, sand and red clay, helping to preserve freshness while encouraging aromatic intensity. Grapes are harvested by hand and carefully selected before gentle pressing. Fermentation takes place in cement vats over 32 days, with délestage and regular remontage. The wine then matures for 24 months, partly in cement and partly in French oak, followed by a further six months of bottle ageing before release.

Food & Serving
A natural partner for Tuscan-inspired dishes, this Chianti Classico pairs beautifully with roast lamb, grilled or braised game, wild boar ragù, beef stew and other richly flavoured meats. Its freshness also makes it well suited to aged Pecorino and other mature cheeses. Serve at 16–18°C. Decant for around 30–60 minutes when drinking young to soften the tannins and allow the aromatic profile to open; older bottles should be decanted carefully, if at all, to avoid losing delicate tertiary aromas.

Producer
Bibbiano has been producing wine in Castellina in Chianti since 1865 and is regarded as one of the historic estates of the Chianti Classico region. The estate places particular emphasis on organic viticulture and on expressing the identity of its individual vineyards. Vigne di Montornello reflects this approach through its combination of carefully tended vines, manual harvesting and extended maturation in cement and French oak, resulting in a polished yet terroir-driven Gran Selezione.
