Sourced from the steep Rive di Collalto slopes, this wine captures the purity, freshness and subtle complexity that have made Conegliano Valdobbiadene a benchmark for quality sparkling wine. The “Superiore” and “Rive” designations underline its elevated origin and meticulous production, offering a step up from everyday Prosecco.

Tasting Notes
In the glass, this Prosecco shows a pale straw-yellow color with silvery reflections and a fine, persistent perlage that forms a delicate, creamy mousse. The nose is vibrant and inviting, with aromas of white flowers (acacia, wisteria), fresh green apple, Williams pear and lemon zest, layered with hints of white peach and a subtle mineral touch. On the palate, it is crisp yet caressing, with lively acidity balancing the Extra Dry dosage and giving a sensation of juiciness and lift. Flavors of orchard fruits, citrus and a gentle floral note are wrapped in a silky, persistent mousse, leading to a clean, slightly saline finish that invites another sip. Best enjoyed within 2–3 years of the vintage to capture its full freshness and aromatic intensity.

Production
The grapes for this wine come from the Rive di Collalto area in Conegliano Valdobbiadene, a hillside zone characterized by steep slopes, well-drained soils rich in marl and limestone, and significant day–night temperature swings that enhance aroma and acidity. Biancavigna works predominantly with Glera grapes, harvested by hand to preserve bunch integrity and allow a strict selection of only the healthiest fruit. After a gentle pressing, the base wine is fermented at controlled low temperatures in stainless steel to retain delicate aromatics. The secondary fermentation takes place in pressurized stainless-steel tanks using the Charmat–Martinotti method, where the wine slowly develops its fine bubbles before being bottled as Extra Dry to highlight both freshness and a touch of softness on the palate.

Food & Serving
This Prosecco is a natural choice as an aperitif, pairing beautifully with antipasti, prosciutto crudo, mild salumi, and fresh cheeses like mozzarella or burrata. It also complements seafood dishes—think shrimp, scallop crudo, sushi and sashimi, lightly fried calamari or simple grilled white fish—as well as vegetable tempura and light, herb-driven starters. Serve well-chilled at 6–8°C (43–46°F) in a tulip-shaped sparkling wine glass to focus the aromas and preserve the mousse. Decanting is not recommended; instead, open just before serving to enjoy its finest expression of freshness and finesse.
