Lage) single vineyard Ried Stein in Engabrunn, this wine captures both the depth and elegance that have made Ott a benchmark name for the grape. Certified organic and farmed biodynamically, it combines purity of fruit with a striking sense of place.

Tasting Notes
In the glass, the 2021 Ried Stein shows a pale to medium straw-yellow hue with green reflections, signaling both freshness and concentration. The nose is refined and focused, opening with white pepper and crushed rock, followed by layers of green apple, ripe pear, lemon zest, fennel, and a hint of wet herbs and smoke. On the palate, this Grüner is taut and energetic, with a firm backbone of acidity and a pronounced salty-mineral grip that runs from start to finish. Citrus and stone-fruit notes interplay with savory spice, white pepper, and a subtle, leesy creaminess that adds texture without heaviness. The finish is long, clean, and slightly herbal, suggesting excellent aging potential: while already enjoyable with aeration, this 2021 should develop greater complexity and harmony over the next 6–10 years, gaining nutty and honeyed nuances while retaining its structure.

Production
Ried Stein is a classified Erste Lage (1. Lage) site near Engabrunn, marked by stony, well-drained soils with a mix of primary rock, gravel, and loess that naturally limit yields and emphasize minerality in Grüner Veltliner. Bernhard Ott farms organically and according to biodynamic principles, working with meticulous hand selection at harvest to bring in only perfectly ripe, healthy grapes. In the cellar, the fruit is handled gently, typically with careful pressing, spontaneous fermentation using native yeasts, and maturation on the fine lees in large neutral vessels, allowing the vineyard character and precision of the vintage to shine without overt oak influence.

Food & Serving
This Grüner Veltliner is a versatile food partner, particularly suited to dishes that benefit from its drive and minerality. Think freshwater fish, simply grilled or pan-fried; shellfish; sushi and sashimi; light poultry; and vegetable-driven cuisine such as asparagus, artichokes, or herb-inflected salads. It also pairs beautifully with Wiener Schnitzel and other delicately breaded dishes, as well as soft cheeses and fresh goat cheese. Serve at around 9–11 °C to highlight its precision and aromatics. A brief decant of 30–45 minutes, especially in its youth, can help the wine open up and reveal more depth and texture.
