Tasting Notes
In the glass, it shows an intense straw-yellow color with a lively antique copper hue, hinting at its Blanc de Noirs character and long maturation. The nose is generous and layered, with aromas of yellow fruit, candied orange, and subtle complexity from extended lees aging. On the palate, it is remarkably fresh and pure, with a refined structure that is lifted by bright acidity and a distinct mineral thread. The extra brut style keeps the profile taut and focused, while its long aging adds breadth, persistence, and a very long finish. This is a Franciacorta with notable aging potential, capable of developing even greater nuance over time.

Production
The grapes come from two estate-owned vineyards in Borgonato, in the heart of Franciacorta, where closely planted Pinot Noir vines benefit from Lombardy’s cool climate and mineral-rich soils. The fruit is carefully harvested and vinified according to the traditional method, with the second fermentation taking place in bottle, followed by at least nine years of lees aging and an additional six months after disgorgement to refine its texture and complexity.

Food & Serving
This Franciacorta pairs beautifully with refined dishes such as oysters, shellfish, caviar, sashimi, roast poultry, or creamy risotto, as well as aged hard cheeses. Serve well chilled at around 8–10°C, and while decanting is not usually necessary, allowing it a few minutes in the glass can help open its aromatic complexity.
