Bergianti Rosso Rifermentato No Autoclave 2025 is a lightly sparkling, organically farmed red wine from Emilia-Romagna, made from Lambrusco Salamino and Lambrusco di Sorbara. Bottle-fermented without an autoclave, filtration or dosage, it offers a dry, naturally expressive take on the region’s traditional, easy-drinking Lambrusco style. Its gentle sparkle and unembellished character make it a distinctive example of contemporary Emilia-Romagna winemaking.

Tasting Notes
Bright and lively in the glass, this unfiltered Lambrusco has a fresh red colour and a naturally cloudy appearance from its retained lees. The nose is fruit-driven and distinctive, with the dark-fruited character of Lambrusco Salamino balanced by the lifted, aromatic freshness of Lambrusco di Sorbara. On the palate, it is dry, light-bodied and refreshing, with lively acidity, gentle bubbles and a straightforward fruit character. A short decant allows the wine to open and helps separate it from the natural sediment. Best enjoyed young for its freshness and energy.

Production
The grapes are grown biodynamically in Emilia, in the Emilia-Romagna region, at approximately 23 metres above sea level. The around 15-year-old vines are trained using the Guyot system and rooted in medium-textured, predominantly sandy and silty soils that encourage bright fruit and a light structure. Harvest takes place by hand between mid- and late September, with deliberately limited yields. After careful destemming, the grapes undergo four days of skin maceration, followed by gentle pressing and spontaneous fermentation with indigenous yeasts. The wine matures first for six months in concrete tanks, followed by a further twelve months of ageing. Its delicate sparkle develops through a traditional second fermentation in bottle, using sweet must from the same vintage; the finished wine is neither filtered nor dosed.

Food & Serving
Serve lightly chilled at around 10–12°C. Its dry profile, refreshing acidity and gentle fizz make it an excellent match for Emilia-Romagna specialities such as cured meats, salami, mortadella, fresh pasta with tomato-based sauces, pizza and grilled sausages. It also works well with burgers, roasted vegetables and informal sharing dishes. Because it contains natural sediment, stand the bottle upright before serving and decant briefly or pour carefully to achieve a clearer pour while allowing the wine to express itself.
