Sourced from the prestigious Grand Cru village of Mailly in the Montagne de Reims, this vintage cuvée showcases precision, tension, and refined power in equal measure. Extra Brut dosage keeps the wine razor-focused, allowing the character of the fruit and chalk-rich soils to shine through with remarkable clarity.

Tasting Notes
In the glass, this Champagne shows a luminous, pale gold hue with fine, persistent bubbles that form a delicate mousse. The nose is immediately expressive and complex, offering layers of red apple, wild strawberry, and blood orange, intertwined with notes of toasted brioche, crushed chalk, white flowers, and a hint of hazelnut and delicate spice. On the palate, the 2019 Mailly Extra Brut is taut yet generous, with a core of Pinot Noir-driven red fruit—wild berries, redcurrant, and nectarine—balanced by vibrant acidity and a distinct mineral backbone. The texture is both silky and energetic, with a long, saline finish that echoes citrus zest, subtle almond, and a whisper of smoky flint. Still youthful, this vintage has the structure and tension to evolve beautifully over the next 8–12 years, gaining further depth, creaminess, and complexity with careful cellaring.

Production
This Champagne is sourced exclusively from Grand Cru vineyards in Mailly, a renowned village on the northern slopes of the Montagne de Reims, where Pinot Noir thrives on chalk and limestone-rich soils with good drainage and excellent exposure. Bérêche is known for meticulous vineyard work, with low yields, hand-harvesting at optimal ripeness, and great attention to preserving the health and biodiversity of the vines. In the cellar, the must is traditionally pressed and vinified with a strong emphasis on expressing site rather than makeup: fermentation typically occurs in a mix of stainless steel and oak, with long lees aging to build texture and complexity. The wine undergoes secondary fermentation in bottle and is aged extensively on its lees before disgorgement, finished with an Extra Brut dosage to retain purity and precision.

Food & Serving
This Grand Cru Extra Brut is an excellent match for refined yet flavorful dishes. Try it with tuna or salmon tartare, scallop carpaccio, or oysters with a light mignonette to highlight its mineral and citrus drive. It also pairs beautifully with roast guinea fowl, veal in a light cream sauce, mushroom risotto, or aged Comté and other semi-hard cheeses that mirror its savory depth. Serve well-chilled at around 8–10°C (46–50°F). A short 10–20 minutes in the glass or a gentle, brief decant into a chilled carafe can help the aromatics open up, especially if serving in larger white wine or tulip-shaped glasses.
