Crafted as a rosé de macération, it gains its color and depth from a short skin contact, resulting in a wine that is both vibrant and gastronomic. This cuvée stands out for its artisanal production and its focus on terroir, offering a compelling alternative to more commercial rosé Champagnes.

Tasting Notes
In the glass, this Champagne typically shows a vivid salmon to pale ruby hue with a fine, persistent mousse. On the nose, expect an inviting mix of wild strawberry, raspberry and red cherry, layered with blood orange, rose petals, chalky minerality and a subtle hint of pastry or brioche. The palate is dry, precise and textural, with juicy red berry fruit at the core, balanced by bright, mouthwatering acidity and a delicate phenolic grip from the maceration. Notes of pomegranate, cranberry and citrus zest mingle with savory, earthy undertones and a saline finish that speaks clearly of Champagne terroir. While approachable on release, it has the structure to develop additional complexity over 3–5 years in bottle, gaining more autolytic and spice notes with time.

Production
Sourced from organically and biodynamically farmed vineyards in the Champagne region, Benoit Lahaye’s Rosé de Maceration is all about expressing Pinot Noir and its chalk-and-clay terroir. Grapes are hand-harvested at optimal ripeness, carefully sorted, and then allowed a brief maceration on the skins to extract color, aroma and gentle tannins before pressing. Fermentation typically takes place with indigenous yeasts in neutral vessels (often oak and/or enamel or steel), preserving purity while adding subtle texture, followed by secondary fermentation in bottle according to the traditional Champagne method. Extended aging on the lees builds finesse, complexity and a fine, elegant mousse, with dosage kept low to highlight the wine’s natural intensity and mineral backbone.

Food & Serving
This rosé Champagne is a versatile food wine, pairing beautifully with charcuterie, pâté en croûte, roast poultry, duck breast, tuna tataki, salmon, or sushi and sashimi. It also complements savory tarts, mushroom dishes, and aged hard cheeses, while being refined enough to enjoy on its own as an aperitif. Serve well-chilled but not icy, around 8–10°C (46–50°F), to allow the aromas to fully express themselves. A brief, gentle opening in the glass is usually sufficient; decanting is not necessary, though pouring into larger-bowled white wine glasses rather than narrow flutes can enhance the bouquet and texture.
