Belondrade Quinta Apolonia is a refined, dry Verdejo from Rueda, offering considerably more depth and texture than a typical regional white. Combining vibrant freshness with subtle creaminess and lees-derived complexity, it reflects Belondrade’s Burgundy-inspired approach to Spain’s signature white grape. The wine is crafted as a more accessible expression of the estate’s meticulous work with Verdejo.

Tasting Notes
In the glass, Quinta Apolonia is straw yellow with delicate green highlights. Its expressive nose combines citrus, white stone fruit such as peach and apricot, and ripe apple with floral notes, gentle spice, and a subtle touch of toast and yeast reminiscent of brioche. The palate is full-bodied yet lively, with ripe yellow fruit, refreshing acidity, and a lightly creamy texture. A mineral finish adds definition and length. It is enjoyable in its youth, when its fruit and freshness are particularly vibrant, but its structure and lees influence allow it to develop additional savoury and complex notes over the next few years when carefully stored.

Production
Quinta Apolonia is made from 100% Verdejo grown in the Rueda region, where bright sunlight, cool nights, and mineral-leaning soils help preserve freshness while encouraging concentrated fruit. Belondrade is known for careful vineyard work and low yields, with grapes harvested at optimal ripeness. The wine is typically composed of a portion fermented in stainless steel for purity and freshness, alongside a portion given a short period of ageing in oak or on its lees. This combination creates a balance between crisp fruit, gentle texture, and added complexity.

Food & Serving
Serve lightly chilled at around 9–11°C. Its combination of freshness, body, and mineral character makes it a versatile partner for grilled or baked fish, shellfish, ceviche, sushi, roast chicken, creamy pasta, and salads with goat’s cheese. It also works well with delicate Spanish dishes such as grilled prawns or seafood tapas. Decanting is not essential, although a brief airing in the glass or a small carafe can help reveal its floral, creamy, and brioche-like nuances.

Belondrade is one of the most respected names in modern Rueda, recognised for elevating Verdejo through meticulous vineyard management, restrained yields, and careful ageing on the lees. Rather than pursuing a simple, intensely aromatic style, the estate takes inspiration from Burgundy, focusing on texture, structure, and the ability of Verdejo to express site and vintage.
