Tasting Notes
In the glass, it typically shows a brilliant pale straw color with a fine, persistent mousse. The nose is refined and expressive, opening with citrus, white flowers, green apple, and subtle brioche-like nuances, followed by chalky minerality and delicate hints of almond. On the palate, it is crisp, dry, and exceptionally focused, with vibrant acidity, layered orchard fruit, and a clean, mineral finish. The non-dosato style gives it a particularly precise, linear profile, making it a wine that can be enjoyed for its freshness now while also developing additional complexity over time.

Produced in Franciacorta, Lombardy, where the cool climate and varied soils help preserve acidity and aromatics, Alma Non Dosato Assemblage 3 is crafted from Chardonnay and Pinot Noir sourced from Bellavista’s estate vineyards. Harvesting is done by hand to ensure fruit quality and careful selection. Vinification follows the traditional method, with secondary fermentation in bottle and extended lees aging to build texture and complexity, while the absence of dosage allows the vineyard character to remain fully visible.

Food & Serving
This Franciacorta pairs beautifully with oysters, sashimi, seafood crudo, light shellfish dishes, and delicate white meats. It also works well with fried appetizers, risotto, and aged hard cheeses. Serve well chilled, ideally around 8–10°C, and decanting is not recommended.
