Tasting Notes
In the glass, Château Clarke 2012 shows a deep garnet core with brick-red reflections beginning to appear at the rim, a sign of graceful evolution. The nose opens with ripe blackcurrant and black cherry, followed by notes of plum, cedar, pencil shavings and cigar box, wrapped in subtle vanilla and mocha from barrel aging. Hints of dried herbs, tobacco leaf and graphite add a distinctly Médoc sophistication. On the palate, the wine is medium to full-bodied with finely woven tannins and a fresh, lifting acidity that keeps the fruit vibrant. Flavors of cassis, blackberry and dark plum are layered with savory nuances of leather, spice, toasted oak and earthy minerality. The 2012 vintage is entering a beautiful drinking window now, with its structure softening into a rounded, harmonious profile. It has the capacity to age further for another 5–8 years under good cellaring conditions, gaining more tertiary complexity and silkier texture.

Production
Château Clarke lies in Listrac-Médoc, an appellation known for its gravelly, clay-limestone soils that are ideal for Merlot and Cabernet Sauvignon, imparting both ripeness and firm structure. The vineyard benefits from Atlantic influences and good drainage, which help maintain freshness and balance in the grapes. Harvesting is typically carried out parcel by parcel at optimal ripeness, with careful sorting to ensure only the healthiest fruit is used. Traditional vinification methods are employed: temperature-controlled fermentation in vats to preserve fruit purity, followed by maceration to extract color, tannin and aromatic complexity. The wine is then aged in French oak barrels—often with a significant proportion of new oak—to refine texture, integrate tannins and add subtle notes of spice and toast before bottling at the estate.

Food & Serving
This 2012 Château Clarke pairs beautifully with classic dishes such as roast lamb with herbs, grilled or braised beef, duck breast, and game birds, as well as mature hard cheeses like Comté or aged Gouda. It also complements earthy preparations featuring mushrooms, root vegetables and truffle accents. Serve at 16–18°C (60–64°F) to highlight its aromatics and texture. Decanting for 45–60 minutes is recommended to allow the bouquet to fully open and the tannins to soften, especially if enjoyed on the younger side of its drinking window.
