Ballabio Farfalla Pinot Nero Cave Privée Metodo Classico Extra Brut 2015 is a rare, cellar‑selection Blanc de Noirs from the hills of Oltrepò Pavese in Lombardy. Crafted exclusively from Pinot Nero and produced in limited quantities, it captures the purest expression of this noble grape in a refined, gastronomic sparkling wine. Awarded “Årets Bobler” by Gambero Rosso, Cave Privée stands as one of Italy’s most acclaimed sparkling wines, originally reserved for the estate’s own private cellar before being shared with discerning drinkers.

Tasting Notes
In the glass, the 2015 Cave Privée shows a luminous straw to pale gold hue with fine, persistent bubbles forming an elegant, creamy mousse. The nose is refined and layered: ripe orchard fruits (pear, golden apple) and white peach intertwine with notes of fresh brioche, toasted hazelnut, citrus zest and delicate floral tones, supported by subtle mineral and chalky nuances from long lees aging. On the palate, it is dry and incisive, as an Extra Brut should be, yet beautifully textured. The Pinot Nero brings structure and depth, with flavours of baked apple, lemon curd, crushed almonds and a touch of dried flowers, all riding on a mouth‑watering acidity and a long, saline finish. The dosage is kept low to let the terroir and the grape speak clearly, giving a wine that is both precise and complex. Thanks to its meticulous traditional‑method élevage and the naturally firm backbone of Pinot Nero, this 2015 vintage has excellent aging potential, continuing to gain complexity and tertiary notes of toast, pastry and honey over the next 5–8 years and beyond, if well cellared.

Production
Farfalla Cave Privée is born in the rolling hills around Casteggio in Oltrepò Pavese, Lombardy’s historic heartland for Pinot Nero and traditional‑method sparkling wines. Here, calcareous clay and marl soils, combined with significant day‑night temperature swings, lend both ripeness and tension to the fruit. Grapes are hand‑harvested at carefully chosen maturity levels to preserve acidity and aromatic finesse, then gently pressed to obtain only the purest must from Pinot Nero for this Blanc de Noirs. Fermentation takes place in temperature‑controlled tanks, followed by an extended period of bottle fermentation on the lees—far longer than the legal minimum—to build texture, complexity and a fine, persistent perlage. Disgorgement is carried out with a very low dosage, resulting in an Extra Brut style that faithfully reflects the character of the vintage and the house’s “private cellar” philosophy.

Food & Serving
This refined Metodo Classico is a versatile partner at the table, ideal with oysters, scallops, sashimi and crudo, as well as delicate fish tartare and caviar. It also shines with tempura, vegetable fritto misto, poultry terrines, veal carpaccio, and mildly aged cheeses such as Taleggio or young Comté. Serve well‑chilled at 8–10 °C in a white wine glass or large tulip to highlight its aromatic complexity and texture. A brief 10–15 minutes of air in the glass, or a short, careful decant into a chilled carafe for mature bottles, can help the wine open up and reveal its full spectrum of aromas.
