Description
A rich and expressive Valpolicella Superiore Ripasso from Azienda Vinicola Prà, distinguished by its second fermentation on dried Amarone grape skins. The result is a wine with supple fruit, gentle spice and the firm, balanced structure expected from the Superiore designation. Ripasso is one of the Veneto’s most characteristic winemaking traditions, bridging the freshness of Valpolicella with the greater depth associated with Amarone.
Tasting Notes
The wine shows a bright robin-red colour with youthful purple highlights. Its nose opens with aromas of black cherry and dried spices, followed by a generous palate of ripe cherry, plum preserve and a subtle rhubarb note. Well-integrated acidity and tannins give the wine excellent balance and definition, while the finish is savoury, gently spicy and fruit-driven. It is approachable now, with the structure to develop additional softness and complexity over the next few years when carefully stored.
Production
The wine is produced using the Ripasso method, with a second fermentation on the dried grape skins used for Amarone. The wine macerates for approximately five days before maturing for 12 months in Allier oak barrels. This process lends greater body, depth and spice while preserving the clarity of the fruit. The wine reflects Graziano Prà’s philosophy of respecting the land and allowing the character of the grapes to remain at the forefront.
Food & Serving
A natural partner for pasta served with rich red-meat sauces, it is particularly well suited to risotto all’isolana with Veronese sausage and black pepper. Its combination of ripe fruit, acidity and structured tannins also makes it an excellent match for mature charcuterie, Pata Negra and Serrano ham. Serve lightly cool, around 16–18°C. Decanting is not essential, but 20–30 minutes in a decanter can help the wine’s fruit and spice aromas open up.
Producer
Graziano Prà has been part of the family wine business since the early 1980s, following a vocation shaped by both his father and grandfather. Under his direction, the estates’ small, highly regarded crus—including Monte Grande and Monte Bisson in Soave and Morandina in Valpolicella—have gained international recognition. Respect for the land and clarity of expression are central to his work, while a fruit-focused approach in the cellar defines the character of Prà’s wines.
