Tasting Notes
In the glass, Ausone 2019 shows a deep, opaque ruby-purple hue that hints at both its concentration and youth. The nose is intensely perfumed and layered, opening with wild blackberries, cassis and dark cherries, then unfolding into notes of violets, crushed rocks, orange zest, smoldering embers, exotic spices and a finely judged touch of new oak.
On the palate, the wine is full-bodied and richly textured yet wonderfully controlled, with a core of pure, vibrant fruit framed by lively acidity. The tannins are ripe, plentiful and very finely grained, giving the wine structure and grip without ever feeling harsh. Flavors of black and blue fruits mingle with graphite, cocoa, floral tones and a saline, limestone-inflected minerality that stretches into a long, resonant finish. This is a profoundly age-worthy Ausone: it will benefit from at least 8–10 years of cellaring, and at top level should evolve beautifully for 30–40 years or more.
Production
Château Ausone sits on one of Saint-Émilion’s greatest terroirs, a steep, south-facing limestone and clay hillside overlooking the Dordogne. The blend is typically dominated by Cabernet Franc with Merlot, planted at high density on terraces and old stone-walled plots that naturally limit yields. The vines are farmed with meticulous care, and harvesting is carried out manually in small batches to ensure only perfectly ripe fruit is selected. In the cellar, fermentation takes place in small lots, often in temperature-controlled vats or barrels, allowing for gentle extraction of color, aroma and tannin. The wine is then aged in a high proportion of new French oak barrels, where it slowly integrates its structure and develops complexity, all the while preserving the purity and tension that the limestone soils impart.
Food & Serving
Ausone 2019 deserves refined, thoughtfully prepared dishes that can match its depth and structure. Classic pairings include roast or grilled lamb, aged ribeye or côte de boeuf, venison, and dishes with wild mushrooms or truffles; it also marries beautifully with dishes featuring rich sauces or slow-braised meats. Aged hard cheeses such as Comté, old Gouda or mature cheddar can also be superb companions. Serve at 16–18°C (60–64°F). In its youth, decant for 2–3 hours to allow the aromatics to fully unfurl and the tannins to soften; as it matures, a gentle 1-hour decant will help separate any sediment and let the wine show its full complexity.
